Our olive mill operates with a continuous cycle system and a controlled extraction temperature below 26\u00b0C.<\/p>\n
Our olives are harvested daily and placed in small boxes to prevent fermentation process-<\/p>\n
They are processed within 8 hours of being picked.<\/p>\n
Immediately after the extraction, our oil is filtered and stored in 500-liter stainless steel tanks under nitrogen, in order to preserve its characteristics and quality over time.<\/p>\n

Our estate\u2019s olive mill in Calenzano is available for external clients during the day upon request.<\/p>\n
